Gluten-Free Chocolate Chip Cookies

Ingredients

  • 2 ½ c almond flour
  • ¼ tsp sea salt
  • ¼ tsp baking soda
  • 1 c stevia dark chocolate chips
  • 2 large eggs
  • ½ c (1 stick) butter, melted and slightly cooled
  • 1 tablespoon vanilla extract
  • ⅓ c raw honey or coconut nectar

Directions

Preheat oven to 350℉. Line a baking sheet with parchment paper.

In a large bowl, combine the almond flour, salt, baking soda, and chocolate chips

In a small bowl, combine the eggs, melted butter, vanilla, and honey. Add the wet ingredients to the dry ingredients and stir to mix well. 

Form the dough into 1-inch balls and transfer the balls to the baking sheet, leaving a 1-inch space between them. Press the balls slightly to flatten. Bake for 15-17 minutes, until the cookies are firm. Let cool briefly on the baking sheet and then transfer to a rack to cool completely.
