Dairy-Free Peppermint Bark

Just know, after sharing these treats you are going to be admired more than you already are. You will also be expected to make them every year for holiday parties for the rest of your life.

INGREDIENTS

Chocolate bottom:

  • 3 tablespoons coconut oil
  • 8 ounces unsweetened chocolate
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 8 drops liquid Stevia (or more to taste)

Coconut Peppermint top:

  • ¼ cup coconut oil
  • ½ cup coconut butter
  • 1 teaspoon peppermint extract
  • 8 drops liquid Stevia (or more to taste)

INSTRUCTIONS

  1. Line a baking sheet with parchment paper.
  1. In a double boiler, melt together coconut oil and chocolate. Whisk in salt, vanilla, and stevia. Pour onto prepared baking sheet, and place in the refrigerator to set. 
  1. While chocolate chills, prepare the top layer. Heat coconut oil and butter in a small skillet over medium heat. Once melted, whisk in peppermint extract and stevia.
  1. Pour over chilled chocolate, and place back in the refrigerator until the coconut peppermint layer is set (at least 20 to 30 minutes).
