    Brussels Salad

    Ingredients

    • 1/2 cup shredded brussels sprouts
    • 1/2 cup shredded kale (stems removed)
    • 1/8 cup chopped onion
    • 1 tablespoon chopped almonds
    • 1/2 avocado chopped
    • 1 thinly sliced radish
    • Salt and pepper
    • EVOO
    • Balsamic vinegar
    • MCT (optional)

    Directions

    1. Mix vegetables in a bowl.
    2. Add EVOO and a splash of balsamic vinegar to taste. 
    3. Add MCT for added nutritional and moisture if desired. 
    4. Add salt and pepper to taste.
